Mexico City did not become a great food city in 2024. It simply became a rated one.

The guide arrived in 2024

Michelin published its first Mexico selection in 2024, covering Mexico City, Oaxaca, Baja California, Los Cabos, Quintana Roo and Nuevo León. Before that, a city with one of the most serious restaurant cultures in the Americas had no stars at all — not because the cooking was not there, but because the guide was not.

The practical effect was immediate and mostly to do with bookings. Restaurants that had been quietly full for a decade became internationally difficult overnight.

What the stars got right

The selection took contemporary Mexican cooking seriously as fine dining rather than as regional cuisine. That distinction had been the sticking point for years — the assumption abroad that Mexican food was cheap by nature and that expensive Mexican food was somehow inauthentic.

It also recognised kitchens working with indigenous ingredients and pre-Hispanic technique on their own terms, rather than as ingredients in a French frame.

What it structurally cannot see

The guide rates restaurants, and a great deal of the best eating in Mexico City does not happen in one. A market stall that has made the same four things for forty years cannot be starred. Neither can a Sunday comida in a house, or a cook who takes twelve bookings a month in her own dining room.

This is not a criticism of Michelin so much as a description of its scope. But it means a star map of Mexico City is a partial map, and the parts it omits are where a lot of residents actually eat.

How we work around it

The house works with chefs who hold or have held a Michelin distinction, and with chefs who never will because they do not run a restaurant.

The Chef’s Table exists for that reason. It is a kitchen closed for one evening, a menu written for one table, and a cook who has nothing to prove to an inspector that night.
